Our new Limited Edition Brazil is a direct trade coffee from the wonderful Mio Coffee Estate in Minas Gerais, Brazil. We met Ana and her family from Mio Coffee a few months ago and instantly fell in love with them.

Apart from being the most wonderful family, their values and practices align with what we stand for and want to support. It was amazing to see their traceability reports down to naming each individual worker who harvested each lot of coffee and also to hear about all the research and work they’re doing regarding the longevity and sustainability of coffee.

We just knew we had to get on board and we look forward to building a long lasting relationship with them, starting with this delicious limited edition.

After cupping numerous of their delicious coffees, we decided to switch things up a little and bring you a new processing method to try, a delightful semi-carbonic maceration bag lot.

The Semi-carbonic Maceration Bag processing method is a mix of anaerobic and aerobic fermentation, creating two environments in one. Coffee cherries close to the walls of the fermentation bag are in contact with oxygen, while the cherries in the middle of the pack have no contact with oxygen. This method has been developed to acidify the coffee and explore the bacteria present in coffee – to form a more acidic and complex profile.

Once roasted, we taste a light white sugar sweetness, juicy apple and subtle lemon water with delicate florals throughout.
